Dark Chocolate Berry Breakfast Bake

With a baby on the way, John and I decided we were in the need for a change of scenery. So for us, the right thing to do was to put our condo on the market, and invest in a property with a house that John and his family are renovating for our expanding family.

For the time being, we are staying at my old house where I grew up, along with my Dad and preparing our space for the baby. With so many projects taking place, John opening up a new business and renovating the house, planning the baby room, and my schoolwork, making breakfast can get tricky. Not to mention, it's the last thing I want to think about in the morning.

So instead of prepping a smoothie every night for the next day, I love using a Sunday morning to throw together this oatmeal bake for the the next couple days ahead. It's such an easy, no mess recipe that is not only filling, but healthy! I like to call it a "berry" breakfast bake because you can literally throw in whatever your favorite berries are! I don't like to add in any sugar, personally, because the dark chocolate sweetens it enough. However, I would recommend drizzling peanut butter or another nut butter over the top if you are looking for a little something more decadent.

I like to cut the tray into 8 even squares so that I know each portion is a half serving size of oatmeal  (about 1/2 cup cooked). This is great for breakfast, or for a midday snack to keep you full and energized! Enjoy it cold or warm, and take it on the go!

Ingredients

  • 2 Cups Rolled Oats

  • 1 tsp Baking Powder

  • 1 tsp Cinnamon

  • ½ tsp Salt

  • ½ Cup Chocolate Chips

  • 2 Cup Berries (can be strawberries, blueberries, blackberries, etc.)

  • 1 Banana

  • 2 Cups Liquid (milk, almond milk, soymilk, water)

  • 1 Egg

  • 1 tsp Vanilla

 

Directions

  1. Preheat oven to 375 degrees.

  2. Spray a 9x4 rectangular baking dish with non-stick spray.

  3. Mix the oats, baking powder, cinnamon, salt, half the chocolate chips, & half the berries together.

  4. Pour into the baking dish.

  5. Add the other half of the berries & chocolate chips on top.

  6. Whisk the liquid, egg, & vanilla in a separate bowl.

  7. Pour into the oatmeal mixture, making sure the all oats are covered.

  8. Bake for 40 minutes or when the edges of the oatmeal bake brown.

  9. Allow to cool before cutting and enjoy!
