Flourless Keto Protein Brownies (Paleo, Vegan, Low Carb)

Recipe from The Big Man’s World

An easy recipe for flourless keto protein brownies made with just 4 ingredients and super fudgy! No eggs, no grains and packed with protein, these protein brownies are also paleo, vegan and sugar-free! Gluten Free, Dairy Free, Low Carb.

These brownies only need FOUR ingredients-

  • Pureed pumpkin

  • Cocoa Powder

  • Smooth nut or seed butter

  • Protein Powder of choice

That’s it!

Protein Powder

Why protein-packed brownies? Ironically, these healthy brownies were developed to substitute a protein shake after a workout. I found that by using certain protein powders, I didn’t need to use any flour or wheat. You guys have also asked for more keto protein powder recipes!

What resulted was a gooey, fudgy protein brownie, also egg-free. This means my vegan and paleo friends can also enjoy these brownies, guilt-free!

The trick to perfect, delicious flourless protein brownies is to use the right kind of protein powder. The market is saturated with various brands of protein powder, and some will yield perfect brownies. Other brands will leave you with hockey pucks.

WHAT IS A GOOD SUBSTITUTE FOR SUGAR?

To keep these protein brownies keto and sugar-free, you’ll notice that there is no sugar added. You have three options here-

Ensure that your protein powder is pre-sweetened

  1. Add some liquid stevia or granulated sweetener of choice

The third option is the one I used- Cover it in chocolate! Before you roll your eyes and claim that chocolate isn’t keto or chocolate isn’t paleo or vegan, I have you covered.

I always use either stevia sweetened chocolate chips (keto, low carb and sugar free) or dairy free mini chocolate chips (vegan and paleo friendly). Both melt beautifully and if you choose to go this route, you won’t need to sweeten your brownies!

INGREDIENTS

1 scoop protein powder of choice 32-34 grams * See notes

INSTRUCTIONS

Preheat the oven to 350F/180C. Line a small loaf pan with parchment paper and set aside.

In a mixing bowl, add all your ingredients and mix very well- The batter should be thick and smooth.

Pour the brownie batter in the lined pan and bake for 12-15 minutes, or until a skewer comes out 'just' clean. Allow brownies to cool in the pan completely. For best results, refrigerate after for a further 2 hours.

Once cooled, cut into 8 pieces. Either enjoy as is, or melt the chocolate chips of choice and dip each brownie in it until evenly coated.

Notes

* See post content for protein powder recommendations. A standard scoop should generally be 32-34 grams.

** Adjust accordingly. I find 1 serving (5-6 drops) to be sufficient sweetness. Flourless Keto Protein Brownies (Paleo, Vegan, Low Carb) should be kept refrigerated at all times. They are freezer friendly too.
