Sometimes it’s nice to be reminded of what it is to be a kid again. Chicken Nuggets are a classic kid food that many parents will sneak one or two when the kids aren’t looking. But now there are SWEET POTATO CHICKEN NUGGETS for everyone to enjoy!
These delicious Sweet Potato Chicken Nuggets are baked to perfection and are Whole 30 & Paleo friendly. Perfect for a healthy kid-friendly weeknight dinner.
Ingredients
1 lb ground chicken
2 cups finely shredded sweet potato about 2-3 sweet potatoes
2 tablespoons coconut oil
2 tablespoons coconut flour
2 green onion sprigs finely chopped
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon chili powder
1 teaspoon salt
Instructions
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside
In a large bowl, add all ingredients and use clean hands to fully incorporate
Using a measuring tablespoon, scoop out the mixture and roll it into a ball before flattening and shaping it into nuggets. Place on the baking sheet
Bake nuggets in the preheated oven for 24-27 minutes, and flip half way through to lightly brown both sides
Allow nuggets to cool for 5-10 minutes before serving
