If life wasn’t already crazy enough, John and I added a third addition to our family when we introduced James, Will and Amy’s youngest brother to the family. Now living in a house with three young children, planning meals ahead and cooking in bulk is an absolute necessity. We love running around with our three kids and Murphy and Chunk (our dogs) - however, if we’re not fueled, we absolutely do not have the energy to keep up!
This breakfast apple crumble is an easy, health, and not to mention, delicious to start your day off on the right foot. This sweet apple bake with a high fiber oatmeal crumble will leave you feeling satisfied and ready to take on the day. I prefer topping it off with greek yogurt for some added protein.
INGREDIENTS
APple Filling:
6 sweet apples
1 tbsp cinnamon
pinch of salt
2 tsp coconut oil
Oatmeal Crumble:
2/3 cup oats
2/3 cup pecans
1 tbsp coconut oil
2 tsp honey
Directions
Chop the apples and sauté them in a pan with the rest of the ingredients at medium-high.
Preheat your oven to 350F.
Put all crumble ingredients into your food processor, add a splash of water (about 1 tbsp), and process until you get a crumbly mixture that sticks together.
Use a small baking pan and spread the apples. You can squeeze the crumble mixture together to form bigger pieces of crumble and spread these over the apples.
Bake for 15-20 minutes or until the crumble is golden brown.
Let cool off a little bit and enjoy with some greek yogurt for breakfast!
