Chocolate Covered "Snicker" Dates

I jumped on this trend to see if it was true what they were saying about these chocolate covered dates that tasted like a snickers. And while I wanted to be able to roll my eyes and discount this recipe, I simply couldn’t. These were so easy to make and super tasty for an afternoon pick me up. Looking forward to testing them out on John and my kids.

I also used piece of pecans in addition to peanut butter and found they were delicious - next time I’m going to use crushed peanuts and the peanut butter.

Recipe adapted from Eating Bird Food

Ingredients

  • 10 medjool dates

  • 2 Tablespoons peanut butter

  • ¼ cup chopped or crushed peanuts

  • ½ cup dairy-free dark chocolate chunks or chocolate chips

  • 1 teaspoon coconut oil

Directions

  1. Cut a slit in each date and remove the pit.

  2. Fill each date with peanut butter (about ½ teaspoon) and a sprinkle of crushed peanuts. Set aside.

  3. Place the dark chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each. It shouldn't take longer than 1-2 minutes total.

  4. Using a toothpick, dip each date into melted chocolate and use a spoon to coat the date until completely covered. Place chocolate covered date on a platter lined with parchment. Sprinkle remaining crushed peanuts on top of each date.

  5. Place the dates in the fridge to allow the chocolate to set.

  6. Keep leftover chocolate covered dates in a sealed container in the fridge for up to a week.
