We all have those days when we’re running around with our never ending to do list. And sometimes on those days it can be particularly difficult to ensure you stay on your healthy game and resist skipping a meal because you couldn’t fit it in.
During the busy work week, my husband, John is typically up at 5am on his way to Apex to train clients all morning. On those mornings, this breakfast is something he always looks forward to! I make it the night before and simply wrap it up in some tinfoil or a plastic baggy and place in the fridge for him to grab and go. And let me tell you, this bacon and eggs kind of guy, loves this oatmeal bake!
Not only is there no sugar added, there is also no flour, or any added ingredient that is going to spike your blood sugar and send you crashing down later. I love enjoying this as a warming breakfast or splitting it in half for a snack during the day.
This Oatmeal Bake is just the thing you need!
Ingredients
1 medium banana
1 tbsp peanut butter
1 tsp cinnamon
pinch of salt
1/2 cup rolled oatmeal
1/4 cup raisins or choice of berry
1/4 cup milk
Directions
Preheat your oven to 375 degrees.
Spray a 6×4 pan with non-stick spray.
Mash the banana and add the peanut butter and stir until thoroughly combined.
Add the cinnamon and salt and mix.
Add the oatmeal, raisins, and milk and stir until the mix is even in the pan.
Bake in the oven for 22 minutes, until firm.
Let cool for 5 minutes in pan when done.
Enjoy warm!
