Salted Parmesan Chickpeas

Do you find yourself craving chips? Maybe you are one of those incredible people that can have one chip and just stop there. I have always loved chips and salt and needed a healthy and satisfying substitute.

These chickpeas are oil free and gluten free, and not to mention chock full of protein. Take these on the go, throw them in a salad, or enjoy eating them on their own!

Ingredients

  • 1 can unsalted garbanzo beans

  • parmesan cheese

  • salt

  • non-stick spray

Instructions

  1. Preheat the oven to 375 degrees.

  2. Drain chickpeas and rinse with water. Allow time for the chickpeas to dry.

  3. Spray a baking pan with non-stick spray.

  4. Pour chickpeas over the baking pan and spread out so each piece is touching the pan.

  5. Bake for 20 minutes, remove from oven and using a spatula, move chickpeas around.

  6. Bake for an additional 10 minutes. Remove from oven and place in a glass bowl.

  7. Using a grater, grate parmesan cheese of the chickpeas and sprinkle with salt.

  8. Shake the bowl to evenly coat the chickpeas.

  9. Taste and add parmesan or salt to your liking!

  10. Store in an airtight container.
